Annie's Fantastic Thai

Today I would like to share this amazing, yummy thai dish with you.  This recipe was shared with me by my weird and wonderful friend, Annie, whom I barely see since she moved into another republic called Hout Bay :)  Even though it's in Cape Town, it's another world on it's own and literally almost at the end of the earth.  But here's to Annie and here's to her wonderful recipe which I've been making since about 2005 or so.

This recipe is super easy and seriously out of this world (just like Hout Bay).  I have served this dish to friends over the years and they are always very impressed.  So impressed are they, that this dish always gets people to get their cameras out and take a picture of it!  Lol!!  A supermodel dish :)

But let's not delay, here it comes!  The big secret is out:


Thai Chicken

15ml Oil
500g Chicken breast, cut into smallish chunks
2 Tbsps Curry powder (less or more, depending on how hot you want it.  I use a hot curry for extra kick).
1 tin Indian tomato mix
1 tin Coconut cream or milk
Chopped Dhania/Coriander


Okay, so you heat the oil and fry your chicken chunks until brown.  Add your curry powder and fry for another 2 minutes or so.  Add your tin of Indian tomato mix and cook for about 5 minutes.  Then add your tin of Coconut cream/milk.  Here I also use some discretion, if you are in a rush and don't have a lot of time to cook of the liquid, I would say just use half a tin.  If you use the whole tin, you will have to cook it until the sauce becomes nice and thick.  Or thicken your sauce by taking a little bit of flour and adding a bit of your sauce to it to make a smooth paste.  Then add this to your pot.

Serve with basmati rice in little bowls and sprinkle with some chopped dhania.  And don't forget those chopsticks!

Mmm! Ek kan onthou wanneer ek dit die eerste keer geeet het by julle, dit was toe ek vir Jethro kom ontmoet het, toe hy so 3 mnde oud was, die warmste wat ek al ooit in die Kaap gekry het! Toe ek terug in Mauritius kom het ek dit probeer maak, maar was maar net nie so lekker soos joune nie, so nog nie weer probeer nie, maar sal nou weer.
